Which would you say is the better search engine, and why - Google Chrome or Firefox 3?
My two main concerns are security and memory usage. Have you had issues with either one when you used one of the two new search engines? I know if I keep the toolbar simple, it'll be easier to use, but what do YOU have as add-ons? Are you happy with them? Thanks for your help.

I think you mean which is the better browser. Your browser is the dashboard to the web, and a search engine is a list of places to drive to.
The main competition between different browsers is speed. In its present form Chrome is winning the race because it is still in a pretty basic form.
Firefox (the latest version is 3) is a very fast browser in its basic form, but it starts to slow down when you add things like an advert blocker, or you add on aids to make navigating about your different pages easier (my favourite is a thing called Mouse Gestures, which allows for simple clicking of buttons to get around between pages and tabs).
Chrome is still in the test stages, or public Beta, as its is called. Basically that means that people can have a go and get used to it, but it is still pretty "buggy", and there is an option to report to the developers every time the browser crashes.
In short - if you want to get a feel of how it is to surf at the speed your broadband connection will allow, give Chrome a go. But if you want something reliable and customisable, Firefox is the answer.
Personally, I use both. Right now I am using Chrome because I am surfing about. If I have forms to fill in, or want to log in to my internet bank account, I use Firefox because I have a secure password protector to fill forms automatically (Roboform add-on).
It's all a matter of personal tastes. Good luck.
